Preparation

  1. Use leftover chicken or cook chicken to an internal temperature of at least 165 degrees. Then cut the chicken into 1/2 inch strips or bite-sized pieces.
  2. Prepare the dressing by mixing together the vinegar, olive oil, soy sauce and honey in a bowl.
  3. In another bowl, toss together the cooked chicken pieces, lettuce, green onions, chow mein noodles and carrots. Pour on the dressing and gently toss all the ingredients together to combine.
  4. Top the salad with the mandarin orange segments.

Wash the fresh vegetables to remove any dirt before prep.

To save time, you can omit the vinegar, olive oil, soy sauce and honey and use your own bottled salad dressing. Balsamic is a pretty good choice or one with a slightly sweet taste fits the bill, too.

Slivered almonds are sometimes added to this salad as an added boost of fiber and... well... because of your heart's desire.

This recipe is gluten free if your vinegar and soy sauce don't contain gluten.
