Are any of us ever too old for a haunted mansion, a trick, a treat, or any of the fun and decorations that come with Halloween? No! Following are a few suggestions for how to add orange and black into your days and mealtimes as we draw closer to October 31. If you spice up healthy eating, you'll eat better. So share with your bandwagon!

Cut an opening into the top of a small pumpkin. Make sure the hole is large enough to hold one pillar candle (go for an orange, white or black candle). And make sure the pumpkin is tall enough, so not too much of the candle sticks out of it.

Scoop out all the pumpkin pulp and seeds. Save the seeds (see below!). Glue plastic eyes to the pumpkin just like in the photo. Spiders have 8 legs, so technically you should poke 8 black jumbo pipe cleaners into the top of the pumpkin (surrounding the opening you just carved into the pumpkin). Bend these to look like spider legs just like in the photo.

Place your candle inside the pumpkin and light to create that Halloween ambience that sends chills up and down our spines.

Note: A crafts store will have both the plastic eyes and pipe cleaners.

Spicy Pumpkin Seeds

Waste not, want not. Use those fresh pumpkin seeds! By the way—1 cup of pumpkin seeds has 8 ghoulish grams of fiber.

Pumpkin Seeds

Ingredients:

  • 1-1/2 cups pumpkin seeds
  • 2 teaspoons olive oil
  • A pinch or two of salt
  • 2 tablespoons of spices such as cayenne, cumin, thyme and/or mesquite (or use 1/2 tablespoon of each of these spices)

Instructions:

  • Preheat the oven to 350 degrees.
  • Remove the pulp from the pumpkin seeds and wash and dry them.
  • Toss the pumpkin seeds with the olive oil in a mixing bowl.
  • Add the spices of your choice to the mixing bowl and toss all together. Note that the total amount of spices is 2 tablespoons, not 2 tablespoons of each spice.
  • Spread the pumpkin seeds in a single layer onto a baking pan. Put the baking pan into the preheated oven for about 30 minutes or until the seeds are crispy and slightly golden.

Sweet Pumpkin Seeds

  • 1-1/2 cups pumpkin seeds
  • 1-1/2 tablespoons melted margarine or butter
  • 1 tablespoon sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions:

  • Preheat the oven to 350 degrees.
  • Remove the pulp from the pumpkin seeds and wash and dry them.
  • Toss the pumpkin seeds with the melted margarine/butter in a mixing bowl.
  • Add the remaining ingredients to the mixing bowl and toss all together.
  • Spread the pumpkin seeds in a single layer onto a baking pan. Put the baking pan into the preheated oven for about 30 minutes or until the seeds are crispy and slightly golden.
